black pepper beef soup attempt #1
adapted Andy Cook's yukgaejang but skipped the gochugaru/garlic/sesame oil and fernbrake, and added 1/4-1/2 cup black peppercorns.
i tasted it and I think it needs an additional ingredient and accent flavor to round it out. Also add herbs next time. filter the peppercorns after the broth is done.
some suggested pairings i found for next time:
- garlic
- basil
- ginger
- parsley
- thyme
- peas
- scallions
- spinach
- vegetables
- radishes maybe too as garnish
